Delicious soft oat bars made with just 5 ingredients perfect for breakfast. Egg free and easy to make dairy and gluten free too.

Between cooking for work and cooking for my family I’m honestly fed up of the constant mess in my kitchen. It literally feels like I am loading and unloading the dishwasher all day long.

So my aim at the moment is to create recipes that use minimal dishes and equipment, starting with these Breakfast Berry Oat Bars.

Everything gets mixed together in the same dish they are cooked in. And I use a cup for measuring too to keep it quick and easy.


If you prefer to measure out properly then don’t worry, I’ve also included the full measurements in the recipe box below.

How To Make Breakfast Berry Oat Bars


Start off with one banana and mash it directly in the dish. Any square or rectangle dish will work just fine.

Next add oats, milk, vanilla extract and frozen berries and mix well.

I used blueberries and strawberries but any kind of frozen fruit will be fine.

All the ingredients being added into a blue dish ready to be combined.


Whack into the oven for 35 minutes and then leave to cool for a few minutes before cutting into 8 pieces.

Gluten, Dairy & Egg Free Breakfast Bars


These breakfast bars are naturally egg free. But they’re also easy to make gluten and dairy free too.

Simply use certified gluten free oats and your dairy free milk of choice.

Serving & Storing Breakfast Oat Bars


I serve these with some and some yogurt and fresh fruit.

These oat bars will keep in an airtight container in the fridge for up to 3 days. Reheat in the microwave.

They can also be frozen and left to defrost in the fridge overnight.

Description​

Ingredients​

  • 1 banana
  • 1 cup / 100g oats
  • 1 cup / 200ml milk
  • 1 tsp vanilla extract
  • 1 cup / 130g frozen berries

Instructions​

  1. Preheat the oven to 180c fan.
  2. Peel the banana and add it to a rectangle or square baking dish.
  3. Mash with a fork.
  4. Add the oats, milk, vanilla extract and frozen berries and mix well.
  5. Bake in the oven for 35 minutes.
  6. Allow to cool in the dish for a few minutes before cutting into 8 bars.
  7. Serve with yogurt and fresh fruit.

Notes​


Leftovers can be stored in the fridge for up to 3 days in an airtight container. Reheat in the microwave.
